For black truffle exporters and cultivation bases in Latin America, maximizing yield and shelf life starts with proper processing. During every harvest season, "cleaning" is often the biggest pain point. Black truffles feature natural folds and are covered in stubborn clay and fine sand. Manual scrubbing is extremely inefficient and cannot handle high-tonnage orders, while ordinary fruit washing machines easily cause surface damage or moisture retention leading to mold.

Newly harvested black truffles are usually wrapped in thick clay. We utilize a food-grade soft brush roller washing machine to perform a gentle dry cleaning process with little to no water. The rotating soft brushes efficiently peel off large chunks of surface clay and dust, greatly reducing the subsequent washing load and preventing mud from contaminating the water.

The pretreated truffles enter the air bubble washing machine. High-pressure blowers at the bottom of the tank continuously generate dense bubbles that burst underwater, releasing micro-vibration forces. The truffles float and tumble gently in the water flow, using this "water flow massage" to thoroughly dislodge fine sand particles hidden deep within the folds, ensuring zero mechanical damage.

Upon exiting the main washing tank, the truffles are elevated by a conveyor belt and pass through multiple rows of stainless steel fan-shaped nozzles for high-pressure spray rinsing. Purified water is used for a 360-degree three-dimensional wash, which, combined with a multi-stage circulating filtration system, completely removes surface froth and dust, fully complying with international hygiene standards for food export.

To prevent truffles from carrying an excessive water load during subsequent drying, the washed material first passes through a vibration dewatering machine. Through high-frequency vibrations, excess surface water is rapidly shed, spreading the truffles evenly to set the stage for deep surface drying.

"Drying" is the lifeline determining the shelf life of black truffles. After vibration dewatering, the truffles immediately enter the air dryer, utilizing multiple groups of high-volume normal-temperature air knives to instantly blow away residual micro-droplets on the surface. This step completely eliminates the risk of mold caused by moisture retention, seamlessly connecting to subsequent vacuum packaging, grading, or quick-freezing (IQF) processes.
